Oyster Dressing

100 very small oysters
1 tb. Butter

Drain juice off oysters.
Brown butter very brown.
Put oysters in browned butter and let it come to a boil.
Boil a few minutes only.
Strain oysters out of butter. Thicken a little with flours. Add a dash of red pepper, replace oysters in butter and serve.

Large and medium size of oysters have too much liquid in them, which tends to spoil the finished dressing. Preferred size known to trade as “Cullinteens.”
